Red mullet are an oily fish but are subtler than mackerel. They are great roasted or baked in tin foil but the fillets can also be pan fried or grilled. You can order your fish whole, headed and gutted or filleted. You will get approximately 50% yield in fillets so a 500-1kg fish will yield 2 fillets of about 180g each. Smaller fish are much cheaper and you can just double up on the helping !
