Where did the sun go ? Ah well - we have to go back indoors to cook for a week or two - why not try baking some lovely fat fillets. A nice easy recipe which works for most fish is just to place a fillet in a piece of tin foil with a knob of butter, sea salt and black pepper - then wrap it up and bake for 15 minutes or so - serve with freshly steamed veg ! yummy !
The nice thing about Summer is that we get such a diversity of fish as all the small boats get to fish every day. This morning, for instance we saw Stone Bass for the first time this year. A beautiful tasting fish (if a little ugly to look at !) This fish makes a lovely plump fillet that rates with any fish any where !
Hake is still plentiful and the turbot season is continuing with small boats landing almost every day.
Our own scallop boat is landing the fattest - plumpest scallops which we can clean for you - just pan fry them in a little butter - delicious !!
